We just returned from a very beautiful, very blustery weekend. After several rainy, windy days, I naturally took to the kitchen to make some soup -- one of the many great things about fall.
Here are a few of my favorite recipes for your inspiration:
Ribollita with italian sausage. Sausage, kale, and white beans -- a classic combo. So good, and so easy. I use spicy italian sausage instead of sweet, because I like a little kick, and anchovy paste instead of actual anchovies, because I am lazy.
Barley soup with greens, fennel, lemon, and dill. This vegetarian soup is simultaneously fresh and hearty, and it's a great way to use up copious amounts of greens (the recipe calls for 8 cups of kale, 6 cups of chard, and 5 cups of spinach).
Christmas lima bean stew. The addition of olive oil and chopped black olives may sound strange, but it creates an amazing savory flavor. You will never believe this soup is vegan (although, if you are like me, you will quickly realize that the only way to make it better is to add cheese).
Avgolemono. This lemon-rice soup is wonderful comfort food -- simultaneously bright and creamy.
